Setting the angle in G HUB corrects this problem and is the recommended way to change the steering angle.
It is possible to use the Steering Sensitivity setting in-game to limit the wheel rotation, but there is no Soft Lock feature, meaning you can keep turning the wheel past the point you are able to in the actual car. I've set this to 540° as it is an overall good setting for most cars in the game.

It's difficult to find the single best settings for every situation since there are so many different cars and types of races in the game. If you primarily play simulation-style games, you will have get used to the physics, but once you do, there is a ton of fun to be had.
